Devizes Chef is selected to cater for Bristol Mayor celebrations

Devizes chef Peter Vaughan, of Vaughan’s Kitchen and Cookery School, has been selected to produce an amuse-bouche to celebrate 800 years of Mayor of Bristol.

The banquet will take place on Friday November 3 at The Harbour Hotel in Bristol. Peter was invited to take part in the event and is taking responsibility for the first dish on the menu – an amuse bouche. He is amongst well-respected chefs preparing a course each at the banquet including: Raymond Blanc, from Le Manoir de Quatre Saisons; Hywel Jones from Lucknam Park and Josh Eggleston from The Pony and Trap. Although there may have been Mayors of the city before him, in 1216 Roger Cordemaner was the first to be recorded. A famous modern chef and restaurateur, Roy Ackerman, felt it would be a great opportunity to mark the occasion by holding a seven course banquet, reflecting each 100 years of the history of the city in food. It has taken a year to organise and during that time, sadly, Roy Ackerman died. However, his legacy, as well as the history of Bristol City, will be remembered and celebrated at the grand banquet. Peter Vaughan, Director and Executive Chef of Vaughan’s Kitchen Catering, Vaughan’s Cookery School and The Bistro Restaurant, Devizes said: “I’m honoured to have been selected to produce a course for the banquet and very proud to be working alongside some of the most respected chefs in the industry.” The banquet has been planned in association with The Royal Academy of Culinary Arts. As Peter is responsible for the first course it was important that it should reflect what people might have eaten in the thirteenth century in the city, so he has chosen to prepare his own recipe Medieval Peppercorn Pottage with Barley Bread. This will be presented in a small tankard on a wooden platter. Peter is known for his themed speciality nights at his Cookery School and restaurant, The Bistro in Devizes. Previous themes include Jane Austin, Spanish and Moroccan. This December, The Bistro has a Dickensian theme with an enticing Victorian menu and there’s also a Day of the Dead, Mexican themed Hallowe’en menu and cookery courses at Vaughan’s Cookery School.
